Stuck in an AirBnB with a limited pantry, this spicy chicken came together using whatever was available. The result is a simple BBQ chicken with a piri-piri inspired kick.
Ingredients
The entire recipe was built around these two ingredients.
- 2 boneless, skinless chicken breasts
- Juice of 1 lemon
- 4 garlic cloves, minced
- 1/4 cup apple cider vinegar
- 1 1/2 tsp smoked paprika
- 1 tbsp Horton Quality Chicken Seasoning
- 1/2 cup olive oil
- 1/2 cup Frank's RedHot Xtra Hot Sauce
- 1 1/2 tsp dried oregano
Now Cook
- Cut the chicken into bite-sized pieces.
- Mix all the ingredients in a non-reactive bowl and stir until combined.
- Add the chicken and toss until well coated with the sauce.
- Cover and let marinate for a minimum of 4 hours, or all day if you have the time.
- Put the chicken on a heated BBQ over medium heat and cook for about 20 minutes, turning occasionally, until done. The BBQ will flare initially because of the oil, so be careful.
- Put the sauce into a pot, bring to a boil, and cook for 5 minutes to kill any bacteria. Pour over the chicken once it's done. Alternatively, reserve some of the sauce before marinating the chicken.
- Serve over basmati rice with optional roasted maple brussels sprouts on the side. You can also serve the chicken cold over lettuce as a salad.
