AirBnB Chicken

Stuck in an AirBnB with a limited pantry, this spicy chicken came together using whatever was available. The result is a simple BBQ chicken with a piri-piri inspired kick.

Ingredients

The entire recipe was built around these two ingredients.

  • 2 boneless, skinless chicken breasts
  • Juice of 1 lemon
  • 4 garlic cloves, minced
  • 1/4 cup apple cider vinegar
  • 1 1/2 tsp smoked paprika
  • 1 tbsp Horton Quality Chicken Seasoning
  • 1/2 cup olive oil
  • 1/2 cup Frank's RedHot Xtra Hot Sauce
  • 1 1/2 tsp dried oregano

Now Cook

  1. Cut the chicken into bite-sized pieces.
  2. Mix all the ingredients in a non-reactive bowl and stir until combined.
  3. Add the chicken and toss until well coated with the sauce.
  4. Cover and let marinate for a minimum of 4 hours, or all day if you have the time.
  5. Put the chicken on a heated BBQ over medium heat and cook for about 20 minutes, turning occasionally, until done. The BBQ will flare initially because of the oil, so be careful.
  6. Put the sauce into a pot, bring to a boil, and cook for 5 minutes to kill any bacteria. Pour over the chicken once it's done. Alternatively, reserve some of the sauce before marinating the chicken.
  7. Serve over basmati rice with optional roasted maple brussels sprouts on the side. You can also serve the chicken cold over lettuce as a salad.
