A sweet and sticky rib recipe built around honey, beer and warm spices. Perfect for slow afternoons around the BBQ.
Ingredients
- 4 racks baby back ribs, cut in half
- 1 cup creamed honey
- 1/2 cup beer
- 3 tbsp honey mustard
- 1 tsp cumin powder
- 1 tsp ground ginger
- 1 tsp garlic powder
- 1 tbsp ground black pepper
- Hot sauce to taste
- 1 cup apple juice
- 2 tbsp frozen orange juice concentrate
- 1/4 cup brown sugar
- 1/2 tsp allspice
- 1 tsp onion powder
Now Cook
- Preheat your BBQ, charcoal or gas, to approximately 325°F.
- While the BBQ is heating, place the honey and brown sugar in a saucepan and bring to a boil. The mixture will foam, so use a fairly deep pot. Stir at a boil for 3–5 minutes.
- Reduce the heat and add the beer and spices.
- Stir in the orange juice concentrate and apple juice.
- Add hot sauce to taste and bring the mixture back to a boil. Adjust the heat level if desired. Remove from the heat and allow the sauce to cool slightly.
- Place the ribs on the BBQ and brown both sides, about 15 minutes total.
- Move the ribs away from direct heat and begin basting. Cook for approximately 20 minutes, turning occasionally. The goal is to build up layers of glaze that caramelize and set because of the sugar content.
- When finished, bring the remaining sauce back to a boil and serve it alongside the ribs for dipping.
Chef's Note: The key to this recipe is patience. Multiple thin layers of glaze will produce a better finish than one heavy coating.
