Corn Fritters
A simple recipe my dad used to make. Crispy on the outside, soft in the middle, and especially good served with warm maple syrup and smoked bacon.
Ingredients
Serves 4
- 3 cups peanut oil for frying
- 1 cup sifted all-purpose flour
- 1 pinch salt
- 1 teaspoon baking powder
- 1 teaspoon sugar
- 1 large egg, lightly beaten
- ½ cup milk
- 1 tablespoon shortening, melted
- 1 (12 ounce) can whole kernel corn, drained
- Maple syrup
- Dash of bourbon (optional)
- Dash of balsamic vinegar (optional)
Method
1. Heat the oil in a heavy pot or deep fryer to 365°F.
2. Combine the flour, baking powder, salt, and sugar in a medium bowl. In a separate bowl, whisk together the egg, milk, and melted shortening. Stir the wet ingredients into the dry ingredients, then fold in the corn.
3. Working in batches, drop spoonfuls of batter into the hot oil using a ladle or large spoon. Fry until golden brown.
4. While the fritters are cooking, warm the maple syrup in a small pot. Adding a few drops of balsamic vinegar and bourbon is a nice touch.
5. Remove the fritters with a slotted spoon and drain on paper towels.
Hint: Serve with good smoked bacon.
