Fresh Ginger Margarita
This is a completely different style of margarita than my house version. The ginger syrup gives it a spicy warmth while the fresh lime keeps everything bright and refreshing.
Don't skip making the ginger syrup from scratch. It only takes a few minutes and is what gives this cocktail its character. Store-bought ginger syrup simply isn't the same.
Fresh Ginger-Lime Syrup
This syrup makes enough for several cocktails and keeps well in the refrigerator for about a week.
Ingredients
- 4 oz fresh ginger, peeled and roughly chopped
- 1 cup fresh lime juice
- 1 cup sugar
Method
1. Combine the ginger, lime juice and sugar in a small saucepan.
2. Bring to a gentle boil and cook for about 2 minutes.
3. Allow to cool slightly, then blend until smooth.
4. Pour through a fine mesh strainer, pressing firmly on the ginger to extract as much syrup as possible.
For Each Margarita
- 3 tbsp tequila
- 1½ tbsp fresh ginger-lime syrup
- 1 tbsp Cointreau
- Ice
- Lime wedge
Method
1. Fill a cocktail shaker with plenty of ice.
2. Add the tequila, ginger-lime syrup and Cointreau.
3. Shake vigorously for about 15 seconds.
4. Strain into a chilled cocktail or margarita glass.
5. Garnish with a fresh lime wedge and serve immediately.
