This is my Superbowl chili and it is best made the day before the game. The overnight rest lets all of the flavours come together.
This is really two chilis in one: Mamma's Boy for those who like things milder and Bad Boy for the rest of us.
Every year I make two pots: Mamma's Boy for the mild crowd and Bad Boy for everyone else. If you want the mild one, you have to ask for it properly: "I'll have the Mamma's Boy, please."
Ingredients
For Both Mamma's Boy and Bad Boy
- 6 lbs lean ground beef
- 1 Vidalia onion
- 4 garlic cloves
- 250g spicy chorizo
- 3 x 19oz cans dark red kidney beans
- 1 680ml jar passata
- 1/2 cup chili powder
- 1/2 cup ground cumin
- 1 tbsp dried oregano
- 1 tbsp dried thyme
- 1/4 cup Worcestershire sauce
- 1/8 cup Tabasco sauce
- 1/2 cup dry red wine
- 1/2 cup beer
- 1/4 cup Supernova smoky chipotle sauce
- 1/4 cup cider vinegar
- 1/4 cup balsamic vinegar
- 1/4 cup molasses
- 1/4 cup HP sauce
- 1 tsp dry mustard
- 1 tsp Barberian's Steak Seasoning
- 2 chipotle peppers in adobo sauce, finely chopped
Additional Ingredients For Bad Boy
- 2 more chipotle peppers in adobo sauce
- 1/8 cup Tabasco sauce
- 1/4 cup dry red wine
- 1/4 cup beer
- 1/4 cup chili powder
- 1/4 cup ground cumin
- 1 tsp crushed chipotle peppers
Method
Cook the ground beef in batches and set aside. Keep the grease.
Transfer the grease to a large pot and heat over medium heat.
Finely chop the onion and crush the garlic.
Cook the onions for about 5 minutes until translucent. Add the garlic and cook for another 2 minutes.
Add the chili powder, cumin, mustard, oregano and thyme. Stir for about 30 seconds.
Add the Worcestershire sauce, Tabasco, beer, wine, vinegars and smoky chipotle sauce. Stir to combine.
Add the molasses, HP sauce and chipotle peppers in adobo sauce.
You should now have a thick paste that is barely simmering. Add the passata.
Add the chorizo and stir.
Add the ground beef and then the drained kidney beans.
At this point your Mamma's Boy chili is ready. Remove a portion for those who prefer it milder.
Add the additional Bad Boy ingredients to the remaining chili.
Cool and refrigerate overnight.
On game day, gently reheat and tweak the seasoning if necessary.
Serve with Caesar Salad and toasted garlic bread.
